After adding notes and dimensions to a drawing I decided I want another body from my model in the drawing.

I go to Views. Tap change bodies and make my selections.

I’m surprised when the bodies shown in the drawing don’t change.

Am I using this correctly?

After selecting other bodies below you can add new views with the newly selected bodies.
However, the existing views remain.
You have to delete these if necessary and insert new views.

Or simply generate a new drawing with the correct body.

I just came across the same issue. Having to recreate all measurements and notes is frustrating. The same nice (!) updating options should be offered as when changes are made to the 3D design (where you are even warned that the drawing has not yet been updated).
