I’m trying to create tthe button of the photo and cannot find a way to create it.
My thought was to create it flat first and then somehow add a curve to lift it up at the center. But nothing I try to do works.
How would you try to create such a thing?

Either the Sweep or Loft function would do that.
I did a quick video for you.
This is using the Sweep tool to sweep an ellipse (or any shape you have in mind) along an arc. I used Visualisations at the to show how it looks outside the Sketch mode.

If you want to make a round button with the same dished look, draw one half and revolve it.
