Possible, but since you can do that by pressing space, it’s actually faster than clicking right click, and then clicking again on it in a list.
Yes, you are correct but that puts you into a sketch mode each time. I thing the “View normal to selected surface” mainly for visualizing something quickly instead of picking the view cube and picking the view you want. I the Cad world it is also about getting the job done quickly with less picks.
