I have this uneven object on the left. I want the sweeps on the right to follow the shape of the object, but don’t know how to seamlessly change sweep shape.
I’m new to this, so I’m not sure if I’m using right terminology or tools.

You likely want to sketch the shape, make copies of the sketch while moving them upward and in the directions of your waggles (or bendy sways) and then lofting them. to each other. 
You can use the pattern tool to help sketch the flutes on the initial shape.
