Is there a way to toggle on/off the overload of dimension information on these sketches on a mac? It is very confusing when dealing with multiple sketches
You should be able to turn dimensions off in the settings. Should be a tick box “Always show dimensions”

Go into sketch mode. Look for the gear on the constraints bar. The setting is there.
