Is it possible to isolate and save certain parts of projects to new projects if there own without bringing the rest with it?

Yes. Isolate what you want and export in Parasolid x_t format. You will get bodies only; no sketches or history.
Is there a way to do this with sketchs as well or if i just isolate the sketch and do the same thing will that work
No, not directly. You would need to duplicate your project then delete all items you don’t need.
